I’m pretty much always late to these trends, but I finally tried out this viral upside down puff pastry technique inspired by a traditional tart tatine and I understand why it became so popular! It’s definitely the easiest way to build beautiful and delicious puff pastry tarts, where you place all your toppings (in this case, apples with honey and brown sugar) straight onto a parchment paper-lined baking sheet, top it with puff pastry and bake to golden brown perfection.
If anything, my timing is perfect because these are the perfect treats for fall and apple season. They’re especially delicious with crisp Envy Apples, which have an uplifting aroma and a balanced sweetness that shine with a bit of honey, brown sugar, and butter. They also naturally stay whiter after slicing for longer than regular apples so you don’t have to worry about them browning as you’re assembling these tarts.
One quick note when making these is that unlike the photo above, you want to make sure you flip over the whole stack of apples before you layer puff pastry on top. That way the red skin of the apple will be visible when you flip the entire thing over after baking instead of hidden as they are in the photo below. It’s a tiny step that will make a difference in the presentation.
Viral Upside Down Puff Pastry Tarts with Envy Apples
Ingredients
- 1 Envy Apple, cored and sliced thinly
- 2-4 tbsp honey
- 2-4 tbsp brown sugar
- 1 tbsp butter, cut into 6 pieces
- Dash of cinnamon, optional
- 1 sheet puff pastry, thawed if frozen
- 1 egg, beaten with 1 tbsp water
Instructions
- Preheat oven to 400F/200C.
- Cut the puff pastry into 6 rectangles and set aside.
- Lay a sheet of parchment paper on a baking tray, and drizzle honey into 6 rectangles just slightly smaller than the puff pastry sheets. Divide the brown sugar, butter and cinnamon if using across the 6 rectangles.
- Lay 6 apples slices onto each rectangle, making sure that the apples are overlapping so the skin is not showing.
- Cover each rectangle with a piece of puff pastry and gently press down to adhere to the apples.
- Brush with the egg wash, then bake for 15-20 minutes until golden brown.
- Let cool briefly then enjoy as is or with vanilla ice cream and enjoy!
These were delicious and so easy to make. I will definitely be making these again…maybe with plums or nectarines.
